This exceptional spirit, crafted by Hacchan, brings together the rich tradition of shochu with the art of cask maturation.

Production Process:
Made from high-quality brown sugar sourced from various producers in Okinawa, along with Thai Mai (Thai Rice) White Koji, this Honkaku Shochu is single distilled under normal atmospheric pressure to preserve the inherent flavors of the base ingredients. Batch 1 consists of a blend of 3-5 years old Kokuto Shochu, aged in refill and recharred virgin American White Oak casks, adding depth and complexity to the spirit.

Tasting Notes:

• Nose: The aroma presents an intricate bouquet of sugarcane sweetness, fresh fruits like green apples, pear, and mint, beautifully balanced with subtle hints of salted caramel and oak spices.
• Palate: The initial sweetness transitions gently into savory, umami-like notes, culminating in a finish enriched with pepper, spices, and a touch of dark chocolate.
• Finish: A smooth and lingering finish that elegantly balances the sweetness with spice and earthiness, leaving a rich and satisfying aftertaste.

Yayoi Shochu Brewery, founded in 1922, is the oldest brewery in Amami Oshima. The representative label of Yayoi series. It deliver a host of flavours on your palate starting with a gentle sweetness and umami notes through the mid palate. You can casually enjoy it with any kind of meal.

Produced by Hombo Shuzo, this world blended whisky is named after Kiichiro Iwai, who played a crucial role in the early years of distilling at Hombo Shuzo. It undergoes a finishing period in Pedro Ximénez Sherry Casks, imparting rich flavors characteristic of sherry maturation.

Tasting Notes:

• Nose: Aromatic notes of dried fruits, particularly raisins, intertwine with sweet hints of maple syrup and toffee, creating a warm and inviting bouquet.
• Palate: The palate reveals a delightful medley of dark fruits, complemented by a smooth and creamy mouthfeel. The sweetness from the sherry cask adds depth, while hints of oak and spice enhance the complexity.
• Finish: The finish is rich and lingering, showcasing a harmonious balance of sweetness and a subtle dryness, leaving traces of dried fruits and a soft, warming warmth.

This is a Cask Maturation Style of Honkaku Shochu. While it may not fit into a formal category, it proudly upholds the essence of Shochu rather than presenting itself as whisky.

Founded in 1922, Yayoi Shochu Brewery is the oldest brewery in Amami Oshima. "Mankoi" refers to the act of beckoning and carries meanings of "inviting," "welcome," and "thousands of customers."

Tasting Notes:
This shochu is aged in oak barrels, which helps to mellow out any astringent flavors and enhances its rich umami character. The rising aroma is complemented by a delightful sweetness on the palate.

Mankoi Kokuto is best enjoyed chilled with ice or diluted with water, making it a versatile choice for both casual sipping and special occasions.

A pure malt whisky from Sasanokawa Shuzo featuring notes of cherry, oak combined with an earthiness. The "Pure Malt" indicates that no grain whisky has been used for this bottling and features components matured in Virgin Oak, Ex-Bourbon & Sherry Cask Matured whiskies for reportedly over 5 years. It also has a component of peated malt at 50 ppm. Their own distillation has also gone through turbulent times in sync with the Japanese whisky market's boom and bust cycles with bulk spirit imports replacing their own production through these times. 

Nose: Sweet caramel with fresh green apples, tropical fruits like banana and cherry crumble pie. Palate: On the palate, some definitive sherry notes along with creamy vanilla and nuts. Finish: Subtle peat that rears its head towards the finish. A balanced vatting of malts with an overall rounded profile.

The Yamazakura Fine Blended Whisky is made by Sasanokawa Shuzo Co, a small distillery in Japan which has recently set up the new Asaka Whisky Distillery under their company as well. Their own distillation has also gone through turbulent times in sync with the Japanese whisky market's boom and bust cycles with bulk spirit imports replacing their own production through these times. 

Tasting Notes: Orange blossoms on the nose, followed by oak, caramel, and fresh orchard fruit on the palate. Easy on the nose and palate, this is a very gentle whisky with an upfront sweetness that stays on the palate followed by dark chocolate in the finish.

A rare and old whisky from Yamazakura aged for over 35 years. Initially in bourbon cask and reportedly finished for about 1 year in sherry casks. Specially bottled by hand at cask strength, this whisky is elegant, excellently balanced and rounded yet offering a variety of flavours including crisp buttered toast, ripe apricots with an oily texture and a lingering warm finish. A very rare bottle to find since only 55 bottles were released in November 2020 and each bottle has been hand crafted by Japanese Artisan Hideaki Kakurai, making each bottle unique and different than the other.
