Known for their exceptional Junmai, Junmai Ginjo, and Junmai Daiginjo sake, Nakamoto utilizes the fermentation rice mash leftover after pressing out the sake, known as Kome Kasu or Sake Kasu.
Production Process:
This often-overlooked by-product, typically containing an ABV of around 8-13%, is single distilled under vacuum pressure to preserve the intrinsic flavors of the underlying rice. The spirit is then matured for approximately 7 years in Refill Virgin Oak casks, enriching it with layers of complexity and character.
