Sharp and elegant taste with a gentle gin jo aroma. Lacking any distinct quirks thanks to being vacuum distilled, it is perfect match to Japanese cuisine. Stone fruit i.e., peach, salty and umami come through. It changes in the middle to more tropical fruity like banana. Hint of chocolate bitter at the finishing. Using Sake yeast and white koji for the fermentation. Under the low temperature, it enhances the aroma of the Shochu.

This rice has been meticulously bred for the first time in 154 years from just 7 grams of rice seeds, resulting in a truly exceptional spirit.
Tasting Notes:

THE HACHI SHOCHU, Kome (Rice), Cask Matured is a collaboration with Fukano Shuzo, which was founded in 1823 by Tokiji Fukano and is located at Hitoyoshi city in Kumamoto. This Kome Shochu comprises a vatting of about 75% of Kome Shochu A, a traditional unmatured Kome Shochu and 25% of Kome Shochu B, cask matured (for about 3.5 years in an Ex-Bourbon Cask) to create a perfect balance between the traditional KUMA Shochu with a hint of additional layers of complexity from the cask maturation. The unmatured traditional Kome Shochu A has been produced using premium Japanese rice (with a polishing ratio of about 90%), Shiro Koji (White Koji) and Sake Ginjo Yeast at low temperature fermentation followed by single distillation under vacuum pressure to retain the flavours of the underlying ingredient Kome (Rice). The cask matured component has been produced with Ki Koji (Yellow Koji), Sake Ginjo Yeast and vacuum distillation.

Color: Gold Nose: A fruity aroma of freshly cooked Japanese rice, mochi cream, fresh green apples, sparkling grapes, honeycomb and a hint of pencil shavings. Palate: Initial sweetness with fresh vanilla and honey reminding us of the oak maturation followed by rice mochi, some fresh apples, plums, apricots and oak spice sweetness at the finish. The flavours of Kome (Rice) come through in the mid palate along with the additional layers from cask maturation.
